マギー 無添加コンソメ と 無添加コンソメ野菜 Non-artificial coloring and flovoring broth and Non-artificial vegetable broth
Well this is tricky. I found these two from Maggi, and I almost recommended to my vegetarian student the vegetable one. I found that the vegetable one has actually....chicken stock in it. So I checked the other one and saw that there is no animal ingredients. It looks like that the ブイヨン野菜 means the base is vegetables but not totally. To avoid your confusion, here are the photos of the two.

グルテンフリーホットケーキミックス Gluten free pancake mix
This is from Kumamoto seifun company. The rice flour is made of rice from Kyushu! The flour has baking soda and sugar, so you can just mix soy milk and fry in a pan. Without eggs the pancake looks whitish, but the taste is still good. I also found the other kind named "米粉入りホームケーキ" that is made of rice flour and sugar and other ingredients, but it has non-fat milk powder and the white of eggs, so you shouldn't choose that one.
Price: around 300 yen, sold in medium to big stores

カゴメ 基本(きほん)のトマトソース Tomato sauce from KAGOME
I found this only-vegetable-based tomato sauce for busy people. I tried twice in two weeks and I liked it. I put it on spaghetti. You can just heat the sauce in a sauce pan or microwave oven, cook pasta in the meanwhile, then mix them together. You can also add some cut and cooked vegetables in the dish because the sauce has no chunks. The price is around 160 yen.

Dried and once frozen tofu. It was invented as a substitution of meat in Japanese Shojin-ryori (vegetarian meals for monks). Its texture is totally different from regular tofu. It soaks water a lot like a sponge, so usually it is cooked in broth. Koyadofu is stuffing and rich in calcium. I usually cook it in broth with soy sauce, mirin(sweet rice alcohol for cooking) and sugar, but you can put dice cut koyadofu in curry.
You can find it at almost any supermarket. Sold in plastic bags. 5 blocks (size: approx. 8cmx10cmx2cm) cost 130 yen. Some stores have bags of small cubes with powdered broth in a separate package, but the broth is made from fish.

Some people eat it not because they are vegans but for a diet because it is non-oil and yet has about the same texture as meat when it is in dishes. There are a few types of shapes- mince, cutlet, cubes and so on. Some soy meat products are soaked in vegetable broth, so you can immediately cook it.
It is sold in HIヒロセ, drug store コスモス, AEON, Youmeマート and many other stores. One bag has about 150-200g of soy meat and it costs 200 yen to 300 yen. You can find the products in dry food section (usually next to dry beans).

テンペ Tempeh
It is Indonesian food, which is cake made of fermented soy beans. Unlike Japanese natto, it doesn't have a strong smell or sticky texture. You can use it for stir-fry, deep fry, stew and so on.
It is sold in Youme マート, 100g for 170-200 yen. The amount is not much but there are only a few stores that handle tempeh, so it is worth the cost.

寒天(かんてん) Japanese agar
Substitution of gelatine. It is made of Japanese algae Tengusa or Ogonori. It has no calories. The texture of jelly made of kanten is firmer than jelly made of gelatine. It has a little whitish color, and it doesn't melt in room temperature. You need to cook, stirring the water with kanten for a while after it melts (this is the key for good kanten jelly!).

As a vegan, you want to avoid dairy products. Some may know that this kanji character 乳 means milk, so when you see this kanji in a product's descriptions, you will not buy it. However, I'd like you to know that this is an exception. This word underlined in red is pronounced "にゅうかざい nyu-kazai". This is emulsifier. The chemistry (?) of water and oil mixing is called 乳化 (にゅうか nyu-ka) in Japanese, but it has nothing to do with milk or dairy products.
If you find this in the ingredients list, don't give up buying the product only for the reason.
